Sweet and Salty Bananas Foster

I have very happy childhood memories of my mama making bananas foster, which only now strikes me as odd as I grew up in the Mid West. Anyway, I remember it was one of my older sister’s favorite desserts. My mom would slice bananas long ways, and cook them in butter with sugar, and we ate them most often with vanilla ice cream. Here is a slighty different version I made after a long day at work. I find I make a lot of my best food is made after a long day at work.

Slice bananas on the bias, which means slice them at an angle instead of straight so the slices or oval. Cook equal parts of butter and brown sugar in a skillet over medium heat, until the sugar dissolves in the butter and the mixture becomes a little thick. Then add the bananas and cook about two minutes, add a splash of booze, I used a very dry white wine, because that is what I had.  Sprinkle with chunky sea salt.
